Beetroot is an excellent health food for anaemia, it is beneficial for our liver, it regenerates cells and cleanses the body.

Ingredients for this delicious recipes:

  • few beetroots
  • a pinch of cummin seeds
  • some brown sugar
  • a pinch of sea salt
  • three table spoon of apple cider vinegar
  • 1/4 cup extra virgin olive oil

Preparation of this healthy Beetroot Salad:

Cook the unpeeled beetroots for approximately 1 hour on a low heat.  You could also place the beetroots in an oven baking it for around 45min. It is ready when you are able to pass a fork through it. Leave it to cool. Peal it using rubber gloves so that you don’t stain your hands. Cut the beetroots in thin slices and add the mix of olive oil, cumin, brown sugar, sea salt and apple cider vinegar. You can place this delicious salad in the fridge and serve cold as a side dish.

Adding ingredients to your salad. To this wonderful salad you could also add:

  • 1/2 cup walnut halves
  •  2 bunches rocket leaves
  •  80g crumbled goat's cheese

Tip 1: Younger the beetroot, taster the meal.

Tip 2: Please note that the beetroot will colour your urine and stool red and that is normal.

How to Stay Healthy?

Ingredients for this Oven Baked Veggie Delight

  • medium-sized zucchini
  • medium-sized eggplant
  • some peppers, preferably in different colours
  • a pinch of sea salt
  • a table spoon of balsamic vinegar
  • 4 table spoons of extra virgin olive oil

Preparation of Roasted Veggies:

Wash the vegetables well and peel the eggplant with the peeler. If the zucchini are young you do not need to peel them. Sprinkle the eggplant with salt and allow it to rest for ½ hour. Wash it well and cut with zucchini in slices. Cut vegetables in even pieces, so they cook at an even rate. Place them in a baking pan covered with a baking paper. Wash the peppers and put them separately in a deeper baking paper. Drizzle all the vegetables with the olive oil and some sea salt.

Preheat the oven. Bake in the oven at 200 degrees for 30-50 minutes. Roast the vegetables in the top third of the oven and move them around half way into the baking. Remove from the oven when the vegetables are golden, and when the pepper is ready for peeling. Leave it to cool.

Mix zucchini, eggplants and peppers, and spice the dish with some olive oil, balsamic and sea salt. You can serve this vegetarian dish as a cold salad or eat it with a toasted bread.

You can also add to this dish:

  • Freshly ground black pepper
  • Herbs of your choice: mint, parsley, thyme, or just a little bit of rosemary
